Taste the Tropics: Discovering KARIBIA

In the world of culinary arts, there exists a dessert so meticulously crafted, it transcends mere taste and embodies the essence of a tropical getaway. Dubbed 'KARIBIA', this creation draws inspiration from the harmonious blend of rum and raisin, an age-old pairing that evokes nostalgia and warmth. But KARIBIA is not just a dish; it's an expedition, a gustatory journey that whisks you away to the shores of paradise with each bite.

At the heart of KARIBIA lies a commitment to selecting only the finest ingredients. The sultanas, plump and juicy, are soaked in a meticulously blended rum that combines the fiery spirit of white rum from the Caribbean islands with the rich, molasses-laden dark rum from Barbados. This fusion not only lays the foundation for the dessert but also pays homage to the heritage and tradition of rum-making in these regions.

The pineapple, a symbol of hospitality and warmth, is sourced from Amphur Baan Kha, Ratchaburi. Here, the fruit thrives under the vigilant care of farmers dedicated to sustainable practices, as certified by GAP (Good Agricultural Practices) and GI (Geographical Indication) of Thailand. The pineapple is then transformed into a honeyed marmalade and a tangy gel, layers that add complexity and depth to KARIBIA with their sweet and sour notes.

Central to the dish is the innovative use of local lime, crafted into a delicate gelée that nestles on the top of all layers, infusing KARIBIA with a zesty tang that cuts through the sweetness. This citrusy surprise is akin to the refreshing splash of ocean waves, revitalising the soul amidst the sun-soaked leisure of a beach holiday.

The genoise, a light and airy sponge cake, takes a unique twist with the incorporation of pecans, adding a nutty, buttery texture that contrasts beautifully with the other elements. It's as if each layer of KARIBIA mirrors the varied landscapes of a tropical island, from the sandy beaches to the lush, verdant hills.

Crowning this masterpiece is a layer rich in coconut flavour, a nod to the ubiquitous presence of this tropical fruit in island cuisines. This white layer captures the essence of coconut in every velvety spoonful, enhanced by the subtle infusion of white rum limeade that leaves a lingering, exotic aftertaste.

KARIBIA is more than a dessert; it's a multi-sensory experience. With each layer, it tells a story of sun-drenched shores, gentle sea breezes, and the unbridled joy of discovering flavours that resonate with the soul. It's a celebration of craftsmanship, a tribute to the vibrant cultures of the Caribbean and Thailand, and a testament to the magic that happens when different worlds unite on a plate.

So, we invite you to embark on this culinary adventure, to savour the taste of holidays where the sea meets the sand under the benevolent sun. Let KARIBIA be your vessel to distant shores, where the flavours of the tropics await to enchant and delight.
